Our take on the classic lemon blueberry cheesecake with locally sourced blueberries from Panchgani. This entremet takes it's defined flavour profile from the classic cheesecake but uses contemporary techniques to create nuanced textures that assimilate the flavours & textures seamlessly
Storage
Product needs to be refrigerated upon receipt and consumed within 2 days. Ideally this needs to be taken out from the fridge 20 minutes prior to service and consumed at room temperature.

Chef’s note
Recreating classics is always a bit of a challenge but in this one I decided to be risky with my take. I took the classic blueberry cheesecake & infused my signature obssesion for all things sour with a punchy lemon curd. It really is one of my most fun creations.
