VM’s take on the classic Black Forest with layers of white & dark chocolate mousse, a cherry soaked sponge and a cherry compote
Ingredients & origin
We use sour cherries from California & single origin dark chocolate from Sao Thome
Storage
Product needs to be refrigerated upon receipt and consumed within 2 days. Ideally this needs to be taken out from the fridge 20 minutes prior to service and consumed at room temperature.

Chef’s note
Doing a take on a classic is always daunting. While I was keen on retaining that familiarity of a Black Forest I wanted to play around with textures that heroes the symbiotic pairing of chocolate & sour cherries.I aimed for simplicity to encase the internal flavour & textural complexity to create a paradox of sorts.
