DESCRIPTION
This super light entremet is a take on the Italian classic, Tiramisu. The Brun ventures out to borrow inspiration from local coffee beans and uses the south indian 'filter coffee' method to create it's own signature coffee flavour.
While actively highlighting the Indian-grown and widely-consumed filter coffee, the Brun's aerated mousse flavoured with a buttery mascarpone cheese alternates with layers of filter coffee soaked ladyfinger biscuit sponge. To break up the monotony of this traditionally soft dessert the Brun has layers of a lightly salted almond coffee crunch.

Chef’s note
I created this flavour as a tribute to the Indian coffee bean. I not only wanted to use beans sourced from diifferent estates given that each one would lend a new dimension to the dessert but I also wanted to focus on an Indian brewing technique to elevate the bean. This light, indulgent and heavy on the coffee dessert is sure to leave every tiramisu lover wanting more!
