DESCRIPTION

This super light entremet is a take on the Italian classic, Tiramisu. The Brun ventures out to borrow inspiration from local coffee beans and uses the south indian 'filter coffee' method to create it's own signature coffee flavour.

While actively highlighting the Indian-grown and widely-consumed filter coffee, the Brun's aerated mousse flavoured with a buttery mascarpone cheese alternates with layers of filter coffee soaked ladyfinger biscuit sponge. To break up the monotony of this traditionally soft dessert the Brun has layers of a lightly salted almond coffee crunch.

Coffee Beans: A house blend of beans from five different estates in the south of India

Storage

Product needs to be refrigerated upon receipt and consumed within 2 days. Ideally this needs to be taken out from the fridge 20 minutes prior to service and consumed at room temperature.

Chef’s note

I created this flavour as a tribute to the Indian coffee bean. I not only wanted to use beans sourced from diifferent estates given that each one would lend a new dimension to the dessert but I also wanted to focus on an Indian brewing technique to elevate the bean. This light, indulgent and heavy on the coffee dessert is sure to leave every tiramisu lover wanting more!
